ingredients:
2 pounds ground pork
kosher salt
2 teaspoons chili flakes
2 eggs
1/2 cup sour cream
2/3 cup parsley leaves,chopped
1 cup grated parmesan
1 cup bread crumbs
1/4 cup vegetable oil
For tomato sauce:
4 T extra virgin olive oil
2 large onions, diced
10 cloves garlic into thin slices
2 t red pepper flakes
2 t granulated sugar
kosher salt
3 medium carrots grated
1 can whole peeled tomato
4 cups water
1 cup basil leaves
freshly grated parmesa
for potato purree:
1 pound potato
1 dl whole milk
2 T butter
salt
In a large bowl mix the meat, salt,chili flakes, eggs, sour cream, parsley, parmesan, bread crumbs with litlle water and oil. Mix well with a hand and make meatballs. Heat the olive oil and fry until they golden brown.
Tomato sauce:
heat the olive oil, add onions, garlic, red pepper flakes, and sugar and season with salt to taste. Stir in the carrots and reseason with salt to taste. Cook for about 2 minutes, and add canned tomatoes, cooked about 5-10 minutes. Add the water and cook for about 20 minutes. Stir in the basil leaves and season with parmesan.
Potato purree:
In a pot with boiling water put peeled potato and cook until it's cooked. Drain, add milk, butter and salt and mash everything until nice and creamy.
