Arctic Cod racks at Ytre in northern Norway. Each Winter, during the Arctic cod fishing season, the daily catch is filleted and hung up to dry. These traditional racks, known as hjell, are used to air-dry the cod for around three months, making them ready for storage or export as 'stockfish'. Such global trade originated in viking times, with records dating back as far as 875AD.
